Shanghai Noodles

A quick, easy, and filling meal that is a great meal prep recipe and alternative to rice.


1 Package (200g) Udon Noodles (Based on Six Fortune Nama Udon 230 cal per package)

1 Cup Chicken Broth

1 TBSP Soy Sauce

2 Shallots Large

1 TBSP Garlic Minced

¼ TSP Ginger Fresh Grated

Green Onion for garnish

Add shallots, garlic, and ginger to soy sauce and half of the chicken broth in a wok. Let simmer on medium heat with the lid on for a few minutes, until shallots start to soften and brown. Add the other half of the chicken broth and package of Udon Noodles to wok and let simmer on medium, without the lid, until noodles have softened, and chicken broth has almost completely simmered off.
