This dressing is a great alternative to store bought dressing. I will also include an alternative to make it a lighter vinaigrette.
1/2 Cup Extra Virgin Olive Oil
2 TBSP Fresh Lemon Juice
1 TBSP Agave Nectar
1 TBSP Apple Cider Vinegar
1 TBSP Minced Garlic
1 1/2 TSP Dijon Mustard
1/2 TSP Sea Salt
1/2 TSP Dried Oregano (1 TSP Fresh)
1/2 TSP Dried Basil (1 TSP Fresh)
Vinaigrette Alternative: Use 1/4 cup of Olive Oil and 1/4 cup of Balsamic Vinegar
Put all the above ingredients in your favorite blender and blend it until its smooth. Pour it over chopped bell peppers, tomatoes, cucumbers, red onions, olives, and feta cheese and you have a perfect Greek Salad.
